I’m sure you have heard about Lebanese cuisine and how delicious it is. That is why I’ve picked a very simple yet healthy recipe for stuffing, straight away from the diary of my mother, who is a Lebanese by birth. So, are you eager to know the recipe? If yes, then read on.

List of ingredients:


• 2 cucumbers (diced)


• 1 red onion (minced)


• 4 tomatoes (diced)


• 2 garlic cloves (minced)


• 3 tablespoons of fresh mint (finely chopped)


• 2 tablespoons extra virgin olive oil


• 1⁄4 cup lemon juice


• 1⁄4 cup pitted sliced kalamata olive


• 1 cup cubed feta cheese or 1 cup crumbled feta cheese


• Salt and pepper


How to Prepare:  First, combine cucumbers, tomatoes, and onion in a bowl and then, top it with garlic, finely chopped mint, olive oil, lemon, salt, and pepper. After that, stir everything well so that the vegetables are evenly coated. Next, you need to melt the cube feta cheese and start adding the veggie-mixture in it. Let the salad chill in your refrigerator for a few minutes and then, use it to fill the pockets. Trust me, your husband is going to love the Pita-Lebanese salad combo.


Tabouli Salad (Tabbouleh)

Now, the next recipe that I’m going to share is about another very popular Middle-Eastern salad known as the Tabouli aka Tabbouleh. Why just Middle East, this salad is quite popular in the Mediterranean countries as well. And most importantly, just like the Lebanese salad, this one is also easy-to-make and absolutely delicious. Read on to know the recipe.

List of ingredients:

• 1/2 cup extra fine bulgur wheat

• 4 green onions, 2 bunches parsley, 1 cucumber and 4 tomatoes (finely chopped)

• 12-15 fresh and finely chopped mint leaves (remove the stems)

• 3-4 tbsp lime juice 

• 3-4 tbsp extra virgin olive oil

• Red meat/Chicken (as per your choice)

• Salt

How to Prepare: First, wash the bulgur wheat and soak it in water for around 5-7 minutes and then, drain it really well and set aside. Next, take a bowl and mix all the veggies and herb that are mentioned above. Then, add the bulgur wheat, salt, olive oil, and a little bit of lime juice to the veggie-herb mixture and stir it well with a salad spoon. Finally, put the mixture in the refrigerator for 30 minutes. 

Once the salad is done, take the red meat/chicken and season it with Baharat (a Middle Eastern spice-blend) and then, fry or grill them till it is cooked through. Once it’s cooked perfectly, mix it with the salad. That’s it; you Tabouli aka Tabbouleh salad is done!
